An outing's real capacity isn't set by the boat alone: it's also set by how many skippers or instructors you actually have available that day, and that count is easy to lose track of when it's handled by phone or WhatsApp while you're also checking the wind forecast.
The usual pattern is bookings scattered across calls to the school, Instagram messages and WhatsApp, juggling by hand how many course or intro-outing spots are left each day. It works with low volume, but on a peak-season weekend — several groups back to back, tourists booking an outing a day ahead — it's easy to overbook an outing with no boat or skipper left, or find out at the dock that two groups were assigned the same boat.
